For this recipe, mild flavored olives are best, because there are plenty of seasonings already in the anchovies and green sauce.

6 Ounce(oz)  mild whole olives, pitted
4   hard cooked eggs, cut into wedges
1 1/2 Tablespoon(T)  vegetable oil
1/8 Teaspoon(t)  black pepper, freshly ground
1/8 Teaspoon(t)  salt
3   hard cooked egg yolks
1/2 Clove(clv)  garlic, minced
2 Tablespoon(T)  fresh parsley, minced
1/2 Cup(c)  water
1/2 Cup(c)  vinegar
4 Ounce(oz)  anchovy fillets


Remove salt from anchovy fillets by placing fillets in a small bowl and adding the vinegar and water.  Let fillets stand in vinegar mixture 2 hours.  Drain.  Carefully wind each fillet around an olive and place them on a serving platter.  Using a food processor fitted with a steel blade, blend parsley, garlic, egg yolks, salt, pepper, oil and vinegar into a smooth sauce.  Pour sauce over fillets and olives.  Let marinate at room temperature 1 hour.  Serve with hard cooked egg wedges.
