1 Cup(c)  texmati rice, rasmati rice or other long grain white rice
1/2 Cup(c)  annatto oil
2 Clove(clv)  garlic, minced
1/2   onion, finely diced
1   small carrot, peeled and finely diced
1   celery rib, finely diced
1 1/2 Cup(c)  wild mushrooms such as morels, thinly sliced
1   ear of corn, kernels removed
1 Pinch(pn)  salt, to taste
1 Teaspoon(t)  cinnamon, ground
2 1/2 Cup(c)  chicken stock


Rinse the rice briefly in cold water and drain. In a large saucepan, heat the annatto oil over medium heat. Add the garlic, onion, carrot and celery and saute for 2 minutes. Add the mushrooms and corn and saute for 4 to 6 minutes, or until the onion is translucent and the mushrooms are tender. Add the rice and cinnamon and stir for 1 to 2 minutes, or until the rice is well coated with the oil. Heat the chicken stock to a boil, add it to the rice mixture, and reduce the heat to low. Cook, uncovered, for 20 minutes, or until the liquid is absorbed and the rice is tender. Season to taste with salt.
