Recipe Description
Here's an easy raspberry cheesecake mousse.  This is low carb enough for induction, and our tester gave it a thumbs up.  Feel free to vary the flavors of gelatin and of syrup.

Ingredients

8 Ounce(oz)  cream cheese, softened
2 Cup(c)  heavy whipping cream
1 Package(pk)  sugar free raspberry flavored gelatin
1 Cup(c)  sugar free raspberry syrup

Preparation

In a saucepan, bring the syrup to a boil.  Dissolve gelatin completely in boiling syrup.  Set aside while it's dissolving.  Stir until every particle is dissolved. In a good sized bowl, whip cream until stable peaks form.  Briefly mix in cream cheese.  With mixer running, stir in gelatin mix.  Pour into container and chill thoroughly.
