Recipe Description
Here's a delicious, low fat version of a classic.  It's lower in calories than most apple pies, but not exactly calorie free.  Save it for a once a week occasion, not every night.

Ingredients

1 Teaspoon(t)  cinnamon, ground
1/3 Cup(c)  light brown sugar, firmly packed
1/4 Cup(c)  grape nuts cereal
1/2 Cup(c)  all purpose flour
1/3 Cup(c)  regular oats, uncooked
2 Tablespoon(T)  margarine, melted
1   prepared pastry shell
1/4 Teaspoon(t)  apple pie spice
1 Teaspoon(t)  cinnamon, ground
1/2 Cup(c)  all purpose flour
1/3 Cup(c)  light brown sugar, firmly packed
1/4 Cup(c)  non fat buttermilk
8   large, crisp cooking apples, peeled, cored and thinly sliced

Preparation

Place apples in a large mixing bowl.  In a small saucepan, combine buttermilk, brown sugar, and flour.  Mix until smooth.  Cook over medium heat, stirring constantly until sugar melts and mixture thickens.  Pour over apples in bowl and toss gently.  Arrange apples snugly in prepared pastry shell, mounding into a firm shape.  To prepare streusel crumbs:  Spread oats in a single layer on a nonstick baking sheet.  Bake at 350°F for 15 to 20 minutes, or until toasted.  Combine all ingredients except margarine and mix well.  Mix in margarine until crumbly.  Cover pie plate with aluminum foil, and bake at 425°F for 15 minutes.  Uncover pie, and sprinkle with streusel crumbs.  Reduce oven temperature to 350°F, and continue baking 30 minutes or until fruit is tender.  Let cool.  Serve warm or at room temperature.
