1 Tablespoon(T)  caster sugar
3   eggs
1 1/2 Cup(c)  plain flour
1 Teaspoon(t)  salt
1/8 Cup(c)  bicarbonate of soda
1 Teaspoon(t)  cinnamon, ground
1 Teaspoon(t)  vanilla essence
4 Ounce(oz)  walnuts, chopped
6 Ounce(oz)  raisins
1/4 Cup(c)  icing sugar, for dusting
12 Ounce(oz)  vegetable oil


Preheat oven to 350°F. Grease a 9 inch ring mold. Quarter, peel, core and slice the apples into a bowl. Set aside. With an electric mixer, beat the oil and sugar together until blended. Add the eggs and continue beating until the mixture is creamy. Sift together the flour, salt, bicarbonate of soda and cinnamon. Fold the flour mixture into the egg mixture with the vanilla. Stir in the apples, walnuts and raisins. Pour into the tin and bake until the cake springs back when touched lightly, about 1 1/4 hours. Let stand for 15 minutes, then unmold, and transfer to a cooling rack. Dust with a layer of icing sugar before serving.
