1/4   raisins
2   old fashioned rolled oats
1/4   nuts, chopped
1/2   sugar
1/2   cinnamon, ground
1/4   nutmeg, ground
1/4   cloves, ground
3/4   whole wheat flour
1/2   vanilla extract
1   thick applesauce, preferably homemade
1/2   vegetable oil

Preparation

Preheat the oven to 375°F. Coat cookie sheets with nonstick spray. Mix together the oil, applesauce, and vanilla. Sift the flour and spices into a separate bowl. Stir in the sugar, nuts, oats, and raisins. Combine the wet and dry ingredients, stirring until there are no dry lumps. Drop the batter by the tablespoonful onto the cookie sheets. Bake for 20 to 25 minutes, until the cookies turn light brown.
