2 Pound(lb)  pork tenderloins
1/4 Cup(c)  dry vermouth or apple juice
1 Unknown()  vegetable cooking spray
2/3 Cup(c)  chunky applesauce
1/4 Cup(c)  dry roasted peanuts, finely chopped
1/4 Teaspoon(t)  salt
1/4 Teaspoon(t)  fennel seed, finely crushed
1/8 Teaspoon(t)  pepper


Using a sharp knife, form a pocket in each pork tenderloin by cutting a lengthwise slit down the center of each, almost to, but not through the bottom of each tenderloin.

Place in a nonmetal baking dish.

Pour vermouth or apple juice in pockets and over tenderloins; cover dish.

Marinate about 1 hour.

Heat oven to 375 degrees. Spray 15x10" jelly roll pan or shallow baking dish with nonstick cooking spray.

In a small bowl, combine applesauce, peanuts, salt, fennel seed and pepper; blend well.

Spoon mixture into pocket in each tenderloin.

Secure stuffed pockets with toothpicks.

Place stuffed tenderloins in prepared pan. Roast at 375 degrees for about 30 minutes.

Let stand for 5 to 10 minutes before slicing.
