Fresh apricots are always the best choice. If they are out of season, canned apricots can be substituted in this light and creamy drink.

3 Cup(c)  fresh apricots, chopped with skins removed
4 Tablespoon(T)  unsweetened pure fruit apricot preserves
4 Cup(c)  fat free plain yogurt
4 Tablespoon(T)  fat free milk, as needed to make drink smooth


Place the apricots and preserves in a blender and blend until pureed, about 2 minutes. Add the yogurt and pulse again to blend. Add just enough milk to achieve a creamy consistency. Refrigerate for 1 hour before serving.
