Asian Duck And Noodle Salad With Peanut Sauce

2   carrots, peeled
2   celery stalks
1   cucumber
15 Ounce(oz)  duck breasts, 5 ounces each
12 Ounce(oz)  rice noodles, cooked, rinsed and drained
1/2 Teaspoon(t)  ginger, ground
2 Clove(clv)  garlic, crushed
2 Tablespoon(T)  dark brown sugar
2 Tablespoon(T)  peanut butter
2 Tablespoon(T)  coconut cream
2 Tablespoon(T)  soy sauce
2 Tablespoon(T)  rice vinegar
2 Tablespoon(T)  sesame oil
1/2 Teaspoon(t)  black pepper, freshly ground
1/2 Teaspoon(t)  chinese five spice powder


Preheat the broiler. Cut the carrots, celery and cucumber into thin strips and set aside. Broil the duck breasts for about 5 mintues on each side until cooked through. Let cool. Meanwhile, heat all the ingredients for the sauce in a small pan until combined and the sugar has dissolved completely. Stir until smooth. Slice the duck breasts. Divide the cooked noodles among 3 serving bowls. Place the reserved carrots, celery and cucumber on top of the noodles, arrange the duck slices on top and drizzle with the sauce. Serve immediately.
