Recipe Description
Tomatillos and asparagus make for a great pairing. Add a few bright red tomatoes into the dish, and you have a colorful and delicious side dish.

Ingredients

1   small pear shaped (roma) tomato, finely diced
1/4 Cup(c)  parmesan cheese, finely shredded
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  pepper, to taste
4   lemon wedges
3 Tablespoon(T)  olive oil
4   large tomatillos, husked and finely diced
1 Pound(lb)  asparagus

Preparation

Snap off and discard tough ends of asparagus and peel stalks, if desired. In a wide frying pan, bring 1 inch of water to a boil over high heat. Add asparagus. Cover and cook just until barely tender when pierced, about 5 minutes. Drain, immerse in ice water until cool, and drain again. Arrange asparagus spears equally on 4 salad plates, or arrange all asparagus on a platter. In a bowl, mix oil, tomatillos and tomato. Spoon over asparagus. Sprinkle with cheese. Season to taste with salt and pepper. Garnish with lemon wedges.
