Recipe Description
Delicious and low fat.  The size of the pan makes a huge difference. With little fat in the batter, a taller cake heats through much more slowly. For example, in a 9-inch pan, this cake normally takes 40 minutes to bake, but if put in an 8-inch pan, an additional 30 minutes is required.

1 Tablespoon(T)  butter, softened
1/2 Cup(c)  sugar
2 Cup(c)  unbleached, all-purpose white flour
1 Teaspoon(t)  baking soda
1 Teaspoon(t)  baking powder
1 Teaspoon(t)  salt
2 Tablespoon(T)  vegetable oil
1   egg
1   egg white
1/3 Cup(c)  nonfat plain yogurt
1 Cup(c)  applesauce
1 Teaspoon(t)  vanilla extract
2 Cup(c)  peeled, diced apples
1/2 Cup(c)  finely ground nuts
1/2 Cup(c)  packed light brown sugar
1/8 Teaspoon(t)  ground cinnamon


Preheat the oven to 375°F.

Coat a 9-inch springform pan with nonstick spray.

Using an electric mixer, beat the butter and sugar until the consistency is like coarse sand.

Sift the flour, baking soda, baking powder, and salt into this mixture.

Beat until evenly combined.

On low speed in a separate bowl, beat together the oil, egg, egg white, yogurt, applesauce, and vanilla.

Pour this into the dry mixture and stir with a rubber spatula until all is moistened. Do not beat vigorously or the cake will toughen.

Pour the batter into the pan.

Distribute the apples, nuts, and brown sugar across the top of the batter.

Dust on the cinnamon and allspice.

Bake for 40 minutes, until the cake is firm to the touch in the center.

Cool in the pan on a wire rack for 10 minutes.

Unmold onto a cakeplate.
