Here's a terrific bread recipe based on one created by two Austrian brothers I once knew. They, and the bread, are straight from the Alps.

1 Cup(c)  warm no sodium or low sodium water, 100° to 105° f
1 1/2 Teaspoon(t)  extra virgin olive oil
1 Teaspoon(t)  cider vinegar
1 1/3 Cup(c)  white, unbleached, bread flour
2/3 Cup(c)  dark rye flour
1/4 Teaspoon(t)  ascorbic acid
1/4 Cup(c)  wheat germ
2 Tablespoon(T)  vital wheat gluten
1/4 Teaspoon(t)  allspice, ground
1/4 Teaspoon(t)  dried rosemary, ground
3 Tablespoon(T)  honey
2 1/2 Teaspoon(t)  active dry yeast


Place all the ingredients in the bread machine pan, set the machine for Light Crust, 1 to 1 1/2 pound Loaf, White Bread. Cool the bread on a rack. Store in ziplock bags. This bread freezes well.
