Recipe Description
This is a perfect dip to take to a party. Cut little baguettes into small rounds for dipping, or use breadsticks.

12 Ounce(oz)  pitted black olives
3 Tablespoon(T)  capers
1/2 Cup(c)  minced onion
1 Teaspoon(t)  minced garlic
2 Tablespoon(T)  chopped fresh parsley
1/4 Cup(c)  grated parmesan cheese
2 Tablespoon(T)  olive oil
2 Tablespoon(T)  balsamic vinegar
1/2 Teaspoon(t)  salt
1/2 Teaspoon(t)  pepper
1/4 Cup(c)  chopped red bell pepper


With a food processor or blender just barely chop olives; remove and set aside.

Put remaining ingredients into processor except 2 tbs. red bell pepper.

Chop into a fine blend and stir this mixture into olives.

Taste and adjust seasonings. Sprinkle remaining chopped red pepper on top for garnish.
