Recipe Description
Serve this smooth soup in the fall, or as the first course for Thanksgiving dinner.  The apples give surprise flavor and added crunch.

2 Tablespoon(T)  parmesan cheese, freshly grated
1/2   green apple, unpeeled, cored and chopped
15 Ounce(oz)  pumpkin
1/4 Teaspoon(t)  thyme, dried
1/2 Teaspoon(t)  sage, dried
1 Teaspoon(t)  salt
2 Tablespoon(T)  dry white wine
4 Cup(c)  chicken stock or broth
1 Cup(c)  celery, sliced
1/2 Cup(c)  yellow onion, chopped
1 Tablespoon(T)  butter


In a soup pot over medium heat, melt butter.  Add onion and celery and saute until tender, about 5 minutes.  Add 1 cup of the stock and simmer, covered, 10 minutes.  Transfer to a blender or food processor in batches and puree until smooth.  Return to pan and add the remaining 3 cups stock, wine, salt, sage, thyme and pumpkin.  Simmer until flavors are blended, about 10 minutes.  Ladle into bowls.  Top with a few apple pieces and sprinkle with Parmesan cheese.
