Recipe Description
For this dish, you will want to choose very small potatoes of the same size, so they take the same time to cook and are easy to eat. Use red or black caviar, or a combination. Caviar comes in different varieties and you may like to try various ones.

30   baby new potatoes
1 Cup(c)  sour cream
2 Tablespoon(T)  caviar

Preparation

Preheat the oven to moderately hot 400°F. Prick the potatoes with a fork and place on a baking tray. Bake for 40 minutes, or until tender. Cool to room temperature. Cut a large cross in the top of each potato, squeeze open, and top with a small dollop of sour cream and a little caviar.

Additional notes

Tip: Cook the potatoes up to 4 hours ahead. Prepare up to 30 minutes before serving.
