8   bacon rashers
1 1883/2000 Gram(g)  butter
1 1883/2000 Gram(g)  margarine
4 59/250 Gram(g)  plain flour
1 Tablespoon(T)  baking powder
1 Teaspoon(t)  sugar
1/2 Teaspoon(t)  salt
7 377/400 Gram(g)  cornmeal
25 Teaspoon(t)  milk
2   eggs


Preheat the oven to 400° F. Lightly grease 14 deep muffin tins or use paper cases. Fry the bacon until crisp. Drain on kitchen paper, then chop into small pieces. Set aside. Gently melt the butter and margarine and set aside. Sift the flour, baking powder, sugar and salt into a large mixing bowl. Stir in the cornmeal, then make a well in the center. In a saucepan, heat the milk to lukewarm. In a small bowl, lightly whisk the eggs, then add to the milk. Stir in the melted fats. Pour the milk mixture into the center of the well and stir until smooth and well blended. Bake for 18 to 20 minutes.
