Bacon Clam Chowder

There isn't a dish that I don't like with bacon. This  holds true with theis rich filling clam chowder. Its great sometimes i cheat and double up the bacon.

Ingredients

4 Slice(sli)  strips bacon. diced
13 Ounce(oz)  minced clams
3 Cup(c)  medium-size potatoes, diced
1 Cup(c)  chopped onions
1 Cup(c)  shredded carrots
10 3/4 Ounce(oz)  cream of mushroom soup
1/4 Teaspoon(t)  black pepper
3 Cup(c)  half-and-half

Preparation

In skillet, cook bacon or salt pork until crisp; drain off fat.

Drain clams. reserving liquid; add enough water to clam liquid to measure 1 1/2 cups total liquid. Cover clams; chill.
In 3 1/2-or 4-quart slow cooker, combine reserved clam liquid, potatoes, onions and carrots. Stir in cream of mushroom soup and pepper. Add bacon.
Cover slow cooker; cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 4 hours.
Stir in clams and half-andhalf. Cover slow cooker; cook for 30 minutes longer.
