Ingredients

1 Tablespoon(T)  brown-rice syrup, optional (sweet dreams brown rice syrup by lundberg; gluten-free)
16   raisins, divided, optional
1/4 Cup(c)  water
1/4 Cup(c)  unsweetened apple juice concentrate (any brand)
1 Teaspoon(t)  vegetable oil
2   large washed and cored baking apples, such as mcintosh jonathan or cortland.
1 Tablespoon(T)  sprinkles of cinnamon

Preparation

Preheat oven to three hundred and twenty five degrees and place apples in a baking dish with lid. Place eight raisins inside each apple, if desired.

In a small bowl, mix water, concentrate, oil, and brown-rice syrup. Pour over apples in baking dish. Sprinkle apples with cinnamon.

Bake forty five to fifty five minutes, covered, until apples are tender; time will vary depending on size and type of apple.

To serve, spoon baked apples into pretty dessert bowls and top with liquid from baking dish.

Serve hot or cold.

 

Additional notes

Thicker skinned apples, such as Red Delicious, should be peeled.
