This filling, baked chicken dish is enough to stand as a meal alone.

6   potatoes, cut up
3/4 Cup(c)  boiling water
1/2 Cup(c)  celery, chopped
1   onion, sliced
1/2 Teaspoon(t)  ginger
5 Pound(lb)  chicken


Preheat oven to 400 degrees.

Clean out chicken and pat dry. Sprinkle cavity with a quarter teaspoon of ginger.

Stuff with favorite stuffing. Add a quarter teaspoon of ginger to stuffing. Place chicken in roasting pan. Roast in a four hundred degree oven for ten minutes. Add onion-celery mixture.

Turn chicken over. Bake twenty minutes more. Reduce heat to 350 degrees. Add boiling water and potatoes. Bake for an additional hour.
