Recipe Description
Combining bread crumbs with milk to form a sauce, is a old trick used by many Scandinavian cooks.

1 Slice(sli)  whole wheat bread, crumbled
2 Tablespoon(T)  mustard
1/4 Cup(c)  milk
2 Tablespoon(T)  butter, melted
1/2 Teaspoon(t)  tarragon leaves, dried
1 Tablespoon(T)  lemon juice
1/8 Teaspoon(t)  pepper
1/4 Teaspoon(t)  salt
4   pollack fillets, thawed if frozen, 4 ounces each


Preheat oven to 400° F.  Spray a 2 quart baking dish with nonstick cooking spray.  Place fish into dish and sprinkle with salt, pepper and lemon juice.  In small bowl, combine tarragon, melted butter, milk and mustard, and whisk until blended.  Stir in the bread crumbs.  Pour this sauce over the fish.  Bake for 20 to 25 minutes, or until fish flakes when tested with fork and sauce is bubbling.  Serve immediately.
