Bananas and dark chocolate come together in a moist and delicious gluten free bundt cake.  One bite and you'll be convinced you can give up gluten for life.

Ingredients

1 1/2 Cup(c)  gluten free flour blend
1 Tablespoon(T)  baking powder
1/2 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  salt
2 Cup(c)  ripe banana, mashed
1 Teaspoon(t)  vanilla extract
3   large eggs
1 Cup(c)  buttermilk
1/2 Cup(c)  semisweet chocolate chips, melted

Preparation

Grease a bundt cake pan and set aside.  In a medium bowl, whisk together the flour, baking soda and salt.  In a mixing bowl with a paddle attachment, beat together the banana, sugar, butter and vanilla until well blended.  Add the eggs one at a time until incorporated.  Mix in the buttermilk by hand and fold in the flour mixture.  Divide the mixture in half and gently add the melted chocolate to one half.  Being careful not to blend the two, spoon batter into your cake pan, alternating between the two.  Using a knife, gently swirl the batter to give it a marble effect.  Bake at 375º F for one hour, or until toothpick inserted in the center of the cake comes out clean.  Cool completely before removing from the pan.
