Ingredients

1/3 Cup(c)  canola oil
16 Cup(c)  brown sugar, firmly packed
3   ripe bananas, mashed
1/3 Teaspoon(t)  vanilla extract
3   egg whites, slightly beaten
1 1/2 Cup(c)  whole wheat flour
1/2 Cup(c)  oat bran or wheat germ
2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  cinnamon, ground
1/2 Cup(c)  raisins

Preparation

Preheat the oven to 325° F. Spray a 9 by 5 inch loaf pan with vegetable spray. In a large bowl, combine the oil and sugar. Add the bananas, vanilla and egg whites. Set aside. In a medium sized bowl, combine the flour, oat bran or wheat germ, baking powder and cinnamon. Add to the banana mixture. Stir until combined. Stir in the raisins. Pour into the prepared pan. Bake for 1 hour 10 minutes, or until a wooden pick comes out clean. Turn out on a rack to cool.
