Banana Walnut Bread

Recipe Description
This recipe was created because of a friend who wanted a bread machine recipe. If your machine has a batter setting, then this will work well, and be extremely flavorful. If not, bake in the oven. It works just as well.

1 1/2 Cup(c)  white, unbleached, all purpose flour
1/3 Cup(c)  granulated sugar
2 Tablespoon(T)  extra virgin olive oil
1/4 Cup(c)  honey
1 Cup(c)  ripe bananas, mashed
2 Teaspoon(t)  lemon juice
1 Teaspoon(t)  white wine vinegar
1 Teaspoon(t)  banana extract or flavoring
1 Teaspoon(t)  cinnamon, ground
1/4 Teaspoon(t)  nutmeg, ground
1/3 Cup(c)  non fat milk
2   medium eggs, beaten
1/2 Cup(c)  unsalted walnuts, chopped
1 Tablespoon(T)  featherweight baking powder
2 Tablespoon(T)  walnuts, partially chopped


Mix all the ingredients in a bread machine pan in the order listed. Remember this is not a yeast recipe, so all the ingredients can be at room temperature. The milk can sit on the countertop for about 10 minutes before pouring into the mixture. If you are using a Breadman, the kneading cycle lasts 29 minutes. If you can catch the 28 minute mark, then add the Featherweight baking powder at that time. If you miss that mark and the machine stops, then stir in the Featherweight with a spoon, stirring it somewhat vigorously. If you can pull the blades out now, that will help later when extracting the cooked loaf. If your machine doesn't have a batter setting, then you can bake this recipe in your oven. (You can't successfully use a standard bread setting on the machine. Instead you must use the batter setting.) After stirring in the Featherweight, place the unsalted walnut halves over the top, close the lid, and the machine will do the rest. To bake in the oven, quickly scrape all the batter into a lightly greased 9 by 7 by 3 inch loaf pan and bake in a preheated 350 degre F oven for 30 to 35 minutes.
