Barbecue Foil Turkey Burgers

1 Pound(lb)  ground turkey
4   strips bacon, finely chopped
1   small sweet green pepper, cored, seeded, and finely chopped
1   small sweet red pepper, cored, seeded, and fine chopped
1   medium-size yellow onion, finely chopped
1/4 Cup(c)  minced fresh coriander (cilantro)
1/4 Cup(c)  finely chopped chutney
1/2 Teaspoon(t)  each salt and pepper
1 Package(pk)  frozen baby lima beans or cut green beans, thawed and drained
1 Package(pk)  frozen corn kernels, thawed and drained
1/2 Cup(c)  thin pimiento strips


Mix the turkey with the bacon, green and red peppers, onion, coriander, chutney, and 1/4 teaspoon each of the salt and black pepper in a large bowl. Shape into 4 patties and set aside.

On a 30-inch-Iong sheet of heavy-duty foil, toss the lima beans with the corn, pimientos, and remaining salt and pepper. Push the vegetables to the outer edges of the foil, place the burgers in the center, and seal all in a tight bundle.

Place the foil packet on a grill set 6inches above white-hot coals and cook for 25 minutes. Open the packet, turn the burgers, reseal, and cook 20 minutes more.

Additional notes

Chutney andfresh coriander give these burgers a sweet, lemonyflavor. To cook indoors, preheat theoven to 375 degree F, place the foil packet on themiddle oven rack, and bakefor 45 minutes.
