2 Tablespoon(T)  fresh parsley, chopped
3 Cup(c)  reduced sodium, defatted chicken broth
1 1/3 Cup(c)  pearl barley
1 Teaspoon(t)  kosher salt
1 Clove(clv)  garlic, chopped
1/2 Pound(lb)  mushrooms, halved and thickly sliced
2 Tablespoon(T)  dry sherry
1 Teaspoon(t)  olive oil


Heat the oil and sherry in a saucepan. Add the mushrooms and garlic and cook until the mushrooms begin to shrink. Keep the pot covered between stirrings. Add the remaining ingredients except the parsley. Bring to a boil, reduce to a simmer, cover, and cook for 30 minutes, until all the liquid is absorbed. Stir in the parsley, cover, and let rest 10 minutes before serving.
