Recipe Description
This easy casserole makes an excellent side dish, or can stand alone for a light dinner. The recipe is versatile, and should be experimented with to suit your tastes and meal plans.

Ingredients

1/2   onion, diced
1 Cup(c)  pearled barley
1   bouillon cube
3 1/4 Cup(c)  water, divided
1 Bunch(bn)  kale
3   carrots

Preparation

Preheat oven to 350° F. Peel and thinly slice carrots. Thoroughly wash and dry kale. Trim and remove stems. In a food processor, finely chop kale. Add water to chopped kale 2 tablespoons at a time to make a paste. Bring 3 cups water to a boil. Dilute bouillon cube in water. Combine all ingredients in a 3 quart casserole dish. Cover and bake 1 1/2 hours.

Additional notes

Variation: Stir in one cup shredded, boiled chicken after the casserole is finished.
