Basic Biscuit Mix (cheese Biscuits Variation)

Recipe Description
The basic biscuit mix can be prepared in advance and stored in your pantry. You can pull it out and quickly whip up a batch of homemade biscuits with a variety of added ingredients.

1 1/2 Teaspoon(t)  salt
3/4 Cup(c)  cold unsalted butter, cut into bits
1 Tablespoon(T)  non fat dry milk
1/2 Cup(c)  cheddar cheese, shredded
1/8 Teaspoon(t)  red pepper, ground
6 Cup(c)  unsifted all purpose flour
1 Tablespoon(T)  non fat dry milk
2 1/2 Tablespoon(T)  baking powder


Sift the flour, dry milk, baking powder and salt into a large bowl. Add the butter and, using a pastry blender or 2 knives, cut it in until the texture of coarse meal. Transfer the mixture to a 2 quart preserving jar. Keeps in the refrigerator for 2 weeks. Place 1/3 of the Biscuit Mix (2 cups plus a scant 2/3 cup) in a large bowl. Add 1/2 cup coarsely shredded sharp Cheddar cheese and 1/8 teaspoon ground red pepper (cayenne) and mix well. Proceed as directed.
