Ingredients

1 Tablespoon(T)  non fat dry milk
1/2 Cup(c)  corn meal
2 Tablespoon(T)  sugar
1 Cup(c)  ice water
1   egg, lightly beaten
3/4 Cup(c)  cold unsalted butter, cut into bits
6 Cup(c)  all purpose flour, unsifted
1 Tablespoon(T)  non fat dry milk
2 1/2 Tablespoon(T)  baking powder
1 1/2 Teaspoon(t)  salt

Preparation

Sift the flour, dry milk, baking powder and salt into a large bowl. Add the butter and, using a pastry blender or 2 knives, cut it in until it reaches the texture of coarse meal. Add cornmeal, sugar, ice water and egg. Stir just until combined. Spoon into a greased muffin tin, filling 2/3 of each muffin cup. Bake at 350 degrees F, uncovered, for 10 to 12 minutes, or until lightly browned.
