Recipe Description
Brown rice comes out best if cooked liked pasta, in a lot of boiling water, then drained and allowed to rest and steam for a few minutes. Using this method, brown rice's individual grains cook up tender and distinct. If white rice was cooked like this, it would turn to mush.

1 Quart(q)  water
1 Cup(c)  brown rice

Preparation

Bring the water to a boil. Add the rice. (Rice sold in supermarkets does not need rinsing. Rice sold in bulk at natural food stores benefits from a rinse in cool water.) Reduce the heat and simmer, uncovered, for 25 to 30 minutes, until the rice is tender but not mushy. Rice from a natural food store will usually take longer to cook than supermarket rice. Take the pot over to the sink, empty the contents into a mesh strainer, set the strainer on the pot, cover with a lid, and allow to sit for 10 minutes. Fluff with a fork and serve.
