Basic Muffins

Recipe Description
Muffins are like cupcakes but not as sweet. They can be served with any meal but are especially good with breakfast and brunches. Muffins are easy to make and are always a success. You can vary this basic recipe by using different flours and by adding chopped nuts, berries, fruits, raisins or spices.

2 Cup(c)  all purpose flour
2/3 Cup(c)  sugar
2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  salt
2   large eggs
1 Cup(c)  milk
6 Tablespoon(T)  butter, melted
1 Teaspoon(t)  vanilla extract


Preheat oven to 400° F. In a large bowl, stir together flour, sugar, baking powder and salt. In a medium bowl, whisk eggs. Add milk, melted butter and vanilla and whisk until blended. Add egg mixture all at once to dry ingredients and whisk until moistened. Spoon batter into paper lined muffin tins, filling them about three fourths full. Bake until a toothpick inserted in the center comes out clean, about 20 minutes. Remove from pan and cool on a rack for 5 minutes. Serve warm.
