Instead of mincing the basil leaves, here they are sliced into fine strips, which adds to the appearance and color of this recipe.

Ingredients

1 Cup(c)  medium ripe tomato, chopped
1/4 Cup(c)  fresh basil leaves, thinly sliced
1 Cup(c)  couscous
1/2 Teaspoon(t)  kosher salt
1 1/4 Cup(c)  water

Preparation

Bring the water and salt to a boil in a small saucepan. Stir in the couscous and basil. Remove from the heat, cover, and let rest for 5 minutes. Meanwhile, cook the tomato in a nonstick skillet until it softens and warms through. Stir the tomato into the couscous and serve.
