Recipe Description
This is a fabulously light summertime treat.  Fresh strawberries are mixed with feather light whipped cream, then chilled to cool perfection.

1 Package(pk)  sugar free strawberry gelatin
1 Cup(c)  boiling water
1/2 Cup(c)  cold water
1 Tablespoon(T)  lemon juice
8 Ounce(oz)  fat free whipped topping
1 Cup(c)  fresh strawberries, chopped
1   9 inch graham cracker crust


Dissolve the gelatin in boiling water in a bowl.  Add the cold water and lemon juice.  Chill until slightly thickened.  Fold together the gelatin mix and the non dairy topping, and blend well.  Fold in the strawberries.  Pour the mixture into the pie shell and chill until firm, about 3 hours.  Garnish with strawberries.
