Bean Dip With A Bite

Recipe Description
This deliciously spicy and creamy bean dip is best served warm with triangles of grilled pitta bread or a bowl of crunchy tortilla chips.

1   onion
2 Clove(clv)  garlic
1 Dash(ds)  salt and ground black pepper
1   red chilli
2 259/400 Gram(g)  grated cheddar cheese
14 3/25 Gram(g)  kidney beans
2 Teaspoon(t)  hot chilli powder
6 Teaspoon(t)  vegetable oil
2   fresh green chillies


Finely chop the garlic and onion.

Slit the green chillies and remove and discard the seeds, then chop finely.

Heat the vegetable oil in a large saute pan and add the garlic, onion, green chillies and chilli powder.

Cook over a low heat, stirring frequently, for about 5-8 minutes, until the onion has softened and become translucent,but is not browned.

Drain the kidney beans, reserving the can juice. Process all but 30ml/ 2 tbsp of the beans to a puree in a food processor.

Add the pureed beans to the pan with 3 tbsp of the reserved can juice and stir well. Cook over a low heat, stirring occasionally.

Stir in the reserved whole beans and the grated Cheddar cheese. Cook gently for 2-3 minutes, stirring until the cheese has melted.Season with salt and pepper to taste.

Slit the red chilli and remove and discard the seeds, then cut the flesh into tiny strips.

Spoon the dip into a serving bowl or into several small bowls and sprinkle the chilli strips over the top to garnish. Serve warm.

Additional notes

To make a dip with a coarser texture, do not puree the beans; instead mash them roughly with a potato masher.
