This unusual pizza is delicious and good for you too! The flavorful hummus is a nice contrast to the rich beef and melted cheese.

3/4 Pound(lb)  80% lean ground beef
1   onion, chopped
2 Clove(clv)  garlic, minced
1   yeast pizza crust, prebaked
1 Cup(c)  creamy and crunchy hummus
1 1/4 Cup(c)  monterey jack cheese, shredded
1/4 Cup(c)  parmesan cheese, grated
2 Tablespoon(T)  fresh parsley, chopped


Preheat oven to 400° F. In heavy skillet, combine ground beef, onion and garlic. Cook and stir until ground beef is browned and cooked and onions are tender. Place pizza crust on a cookie sheet and spread with hummus. Top with 1/4 cup Monterey jack cheese. Drain ground beef mixture thoroughly and sprinkle over pizza. Top with remaining Monterey jack and Parmesan cheeses. Bake for 20 to 30 minutes, or until crust is golden brown and cheese is melted and beginning to brown. Sprinkle with parsley, let stand for 5 minutes, then slice to serve.

Additional notes

Tip: When you're fated with leftovers, think pizza! With a crust or two in the freezer, it's easy to create your own fun pizzas. Creamy salad dressings work well for the sauce, and anything from chicken to sliced roast beef makes a great topping. Bits of leftover cheese and leftover vegetables turn into a great pizza for pennies.
