Beef Brisket And Sauerkraut

Recipe Description
We first tried this dish at the Red Lion Inn. We loved it so much, we had to try and make it at home. This is our version, now a well loved family favorite.

Serves To:USMetric
1 Tablespoon(T)  brown sugar
1 Dash(ds)  salt
2 Tablespoon(T)  flour
1 Quart(q)  sauerkraut
1   small onion, minced
1   tart apple, grated
3 Pound(lb)  brisket of beef
1 Dash(ds)  pepper


In a large saucepan, put one half of the sauerkraut. Sprinkle with flour, add the meat, onion, apple and sugar. Sprinkle with pepper and salt, then lay the other half of the sauerkraut on top and cover with boiling water. Cover tightly and cook over it slow fire for 1 1/2 to 2 hours.
