Recipe Description

Ingredients

13 Ounce(oz)  minced clams, with liquid
1 Tablespoon(T)  cornstarch(optional)
1 1/2 Cup(c)  skim milk
1/2 Cup(c)  white wine
4   small potato, diced
1 Ounce(oz)  fresh mushrooms sliced
1   medium onion, diced
1/2 Teaspoon(t)  oregano
1/2 Teaspoon(t)  salt
1/4 Teaspoon(t)  fresh-ground black pepper

Preparation

Pour the clams and their liquid into a large saucepan or kettle. Ifusing the cornstarch, mix it with 1 cup of the milk in a,small bowl or measuring cup. Reserve.

Add the other 1/2 cup of the milk to the clams, and begin heating over medium heat. Do not boil.

When the clam mixture is hot, stir in the cornstarch mixture, or the plain milk if you're not using cornstarch.

Add the remaining ingredients, stirring well. Cover and cook, stirring occasionally, over medium to medium-low heat until the potatoes are tender and the soup is hot, but never boiling.
