Bitter Greens With Pears And Stilton Dressing

Recipe Description
Stilton is called the "queen of cheeses" for good reason, it's divine. But it must be ripe. Underripe Stilton tends to taste more like the queen of soap. Ask the salesperson to let you taste the cheese before purchasing it. If you can't find ripe Stilton, Roquefort is a good substitute.

Ingredients

1   large head endive, cut into 1 inch pieces
1 Bunch(bn)  watercress
1   large ripe pear, cut into thin slices
1/2 Cup(c)  ripe stilton, crumbled, plus extra for topping
1 Cup(c)  buttermilk
2 Tablespoon(T)  sour cream
2 Tablespoon(T)  mayonnaise

Preparation

Toss together the endive and watercress. Place on serving plates. Place some of the pear slices on top. In a medium bowl, stir together 1/2 cup Stilton, buttermilk, sour cream, and mayonnaise. Spoon over each salad. Top each with additional Stilton.
