Recipe Description
This simple side dish is excellent served with grilled hamburgers. It can also be part of a vegetarian lunch, as a light main dish.

2 Tablespoon(T)  butter
1   onion, chopped
15 Ounce(oz)  black beans, rinsed
15 Ounce(oz)  corn, drained
15 Ounce(oz)  creamed corn
1/4 Teaspoon(t)  salt
1 Dash(ds)  cayenne pepper
2 Tablespoon(T)  parsley, chopped


In heavy skillet, melt butter and cook onion over medium heat until crisp tender, about 4 minutes. Rinse and drain black beans and add to skillet along with drained corn, undrained creamed corn, salt and pepper. Cover and bring to a simmer. Simmer for 4 to 5 minutes until thoroughly heated. Stir in parsley, and serve.
