Potatoes, green beans, and tuna take to any number of dressings, which is why the vinaigrette choice is left to you.

2/3 Pound(lb)  red bliss potatoes, cut into 1/2 inch cubes
1/2 Pound(lb)  green beans, trimmed and halved
1/2 Cup(c)  red onions, thinly sliced
2 Tablespoon(T)  fresh parsley, chopped
1   tomato, cut into wedges and then each wedge halved
1 Ounce(oz)  water packed tuna, drained
1/2 Cup(c)  low fat vinaigrette


Steam the potatoes until tender, immerse in cold water, and drain. Steam the green beans, immerse in cold water, drain, and toss in with the potatoes. Stir in onions, parsley, tomatoes, and tuna. Pour dressing over the salad and toss. Allow to rest at least 1 hour before serving to allow the potatoes to absorb some of the dressing.
