1/2 Cup(c)  sucanat
1/4 Cup(c)  canola oil
1/3 Cup(c)  unsweetened applesauce
2 Cup(c)  whole wheat flour
1/4 Teaspoon(t)  fine sea salt
1 Cup(c)  fresh blueberries
1 Tablespoon(T)  baking powder
2/3 Cup(c)  fresh orange juice


Preheat the oven to 375° F. Line a standard muffin tin with paper liners. In a large sized bowl, whisk together the flour, Sucanat, baking powder and salt. In a medium sized bowl, whisk together the applesauce, juice and oil. Fold the wet ingredients into the dry, being careful not to over mix. Fold in the blueberries. Divide the batter equally among the muffin cups. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Let cool on a wire rack.
