| 1 | Pinch(pn) | salt, to taste | |
| 1 1/2 | Cup(c) | buttermilk | |
| 1/2 | Tablespoon(T) | baking soda | |
| 2 | Cup(c) | white flour | |
| 8 | Ounce(oz) | peeled raw potatoes | |
| 8 | Ounce(oz) | freshly cooked potatoes |
Preparation
Peel the cooked potatoes while they are still hot. Drop them into a bowl and mash immediately. Grate the raw potatoes, add to the mash with the flour and sieved baking soda. Mix well and add enough buttermilk to make a stiff batter. Heat a griddle or frying pan, grease with butter and drop in tablespoons on to the pan. Make large or small pancakes using anything from 1 to 4 tablespoons of mixture, and cooking for about 5 minutes on each side.
