Recipe Description
Chopped broccoli, shredded carrots and select seasonings are simmered in a velvety smooth cheese sauce.

1 Pinch(pn)  pepper, to taste
1/4 Teaspoon(t)  nutmeg, ground
2 Cup(c)  sharp cheddar cheese, grated
1 Pinch(pn)  salt, to taste
1 Cup(c)  carrots, shredded
8 Ounce(oz)  broccoli, coarsely chopped
2 Cup(c)  chicken broth
2 Cup(c)  half and half
1/4 Cup(c)  all purpose flour
5 Tablespoon(T)  butter, melted
1/2   medium onion, chopped


Saute the onion in 1 tablespoon of the melted butter.  Set aside.  Using a wire whisk, combine the remaining 4 tablespoons melted butter and the flour in a large pot over medium heat.  Cook, stirring frequently, for about 4 minutes.  Slowly add the half and half and continue stirring.  Add the chicken broth, whisking all the time.  Simmer for 20 minutes.  Add the broccoli, carrots and sauteed onion.  Cook over low heat until the veggies are tender, abour 20 minutes.  Add salt and pepper to taste.  By now the soup should be thickened.  Pour in batches inro a blender and puree.  Return the puree to the pot and place over low heat.  Add the grated cheese and stir until well blended.  Stir in the nutmeg.
