6 Cup(c)  reduced sodium, defatted chicken broth
10 Ounce(oz)  frozen cheese or chicken tortellini
1/3 Cup(c)  scallions, chopped
1/2 Cup(c)  carrot, diced
1 Teaspoon(t)  basil, dried
1/2 Teaspoon(t)  kosher salt, or to taste
1/4 Teaspoon(t)  pepper, freshly ground
1 Cup(c)  fresh spinach or escarole, chopped
1 Cup(c)  frozen peas

Preparation

Bring the broth to a simmer. Stir in the tortellini, scallions, carrot, basil, salt and pepper. Simmer, covered, for 7 minutes. Stir in the remaining ingredients. Cook until the tortellini is tender, about 5 minutes more.
