2 Cup(c)  cooked white rice, chilled
1/3 Cup(c)  red bell pepper, chopped
1/4 Cup(c)  green onions, thinly sliced
2   egg whites, lightly beaten
1   egg, lightly beaten
2 Tablespoon(T)  soy sauce
3 Tablespoon(T)  peanut or vegetable oil, divided


Mix rice, bell pepper, green onions, egg whites, egg and soy sauce in medium bowl. Heat large non stick skillet over medium heat. Add 1 tablespoon oil and heat until hot. For each patty, spoon 1/3 cup rice mixture into skillet. Flatten slightly with back of spatula. Cook patties, 3 at a time, 3 to 4 minutes per side, or until golden brown. Keep patties warm in 200° F oven. Repeat with remaining oil and rice mixture.
