Capellini Di Angelo Al Filetto Di Pomodoro (angel Hair Pasta With Basil Tomato Sauce)

Recipe Description
The basil and tomato sauce given here is a basic sauce that can be used in many other recipes.  Fresh basil will give the richest flavor for this dish, but the dried herb can be substituted.

1 Tablespoon(T)  olive oil
5 Clove(clv)  garlic, minced
1   large shallot, minced
3   large ripe tomatoes, skinned, seeded and chopped
1 Pinch(pn)  coarse salt, to taste
1/4 Cup(c)  fresh basil, chopped
8 Ounce(oz)  angel hair pasta
3 Quart(q)  water
4 Tablespoon(T)  parmesan cheese, grated
1 Pinch(pn)  black pepper, freshly ground, to taste


Heat the oil over medium heat.  Add the garlic and shallot, and saute until the garlic is golden and the shallot wilted.  Add the tomatoes.  Season with salt, pepper and basil.  Meanwhile, cook the pasta in an uncovered pot in rapidly boiling water for about 1 to 2 minutes.  Test it after 1 minute for al dente ("firm to the bite") texture.  Drain the pasta, reserving 2 tablespoons of the water it was cooked in.  Add the pasta and the reserved water to the tomato sauce.  Stir gently to coat the pasta with the sauce.  Remove to a serving platter, sprinkle with the Parmesan cheese, and serve immediately

Additional notes

Tip:  Though tomato skins contain fiber, vitamins, and minerals, more elegant recipes, such as this one, generally say to remove them.  If you wish to remove the skins, drop the tomatoes in boiling water for about 1 minute.  Remove them from the pot and run them under cold water.  The skins should peel off easily.
