Recipe Description
Cardoon looks like a mean celery with a thyroid problem, but the flavor is quite mild. Althoughyou can use jarred roasted red peppers in this recipe, I think homemade are much better in dishes where their flavor is such an important factor.

Ingredients

3 Cup(c)  cooked cardoon, diced
3/4 Cup(c)  roasted red bell peppers, diced
1/3 Cup(c)  scallions, white and green parts, sliced
2 Tablespoon(T)  fresh parsley, chopped
1 Tablespoon(T)  extra virgin olive oil
2 Tablespoon(T)  fresh lemon juice
2 Tablespoon(T)  red wine vinegar
1 Clove(clv)  garlic, pressed

Preparation

In a large bowl, toss together the cardoon, red peppers, scallions and parsley. In a small bowl, combine the oil, lemon juice, vinegar and garlic. Pour the dressing over the salad and toss to combine.
