Recipe Description
The first time I prepared this hearty soup for my family, it was a surprise hit! It is both delicious and healthy.

Ingredients

2 Tablespoon(T)  onion, chopped
4 Tablespoon(T)  low fat margarine
1/2 Cup(c)  evaporated fat free milk
1/4 Cup(c)  egg substitute
2 Tablespoon(T)  low fat cheddar cheese
1/2   head cauliflower, cooked and pureed
6 Ounce(oz)  turkey sausage, cooked, drained and crumbled

Preparation

Saute onion in margarine in a skillet. Add evaporated milk and heat gently. Do not boil. Whip egg substitute into the milk mixture. Sitr in cheese and cauliflower puree. Continue stirring to blend flavors. Add sausage and heat through.
