Cauliflower and broccoli make a healthy, colorful and flavorful side dish, suitable for pairing with any number of main entrees.

Ingredients

1 Bunch(bn)  large cauliflower, cut in florets, cooked or steamed
1 Bunch(bn)  broccoli, blanched
2 Tablespoon(T)  low fat margarine
1/2 Cup(c)  fat free sour cream
1/2 Cup(c)  parmesan cheese
1/2 Cup(c)  seasoned breadcrumbs
1 Pinch(pn)  pepper, to taste

Preparation

Preheat oven to 325° F. Place cauliflower in 1 1/2 quart baking dish coated with nonstick spray. Chop broccoli coarsely and puree in a food processor with margarine and sour cream. Add Parmesan cheese. Season with pepper. Cover cauliflower with broccoli puree and sprinkle top with breadcrumbs. Bake 20 minutes.
