Recipe Description
In spite of its rather prosaic name, this particular recipe is very good and makes a nice light supper or lunch dish, or could even be used as a first course for a dinner party.  The combination of celery and cheese works well, although if you prefer, endive can be substituted for the celery.  (Note: In England what Americans call endive is known as chicory, and chicory is known as endive.  Here I follow the American practice.)

1 Ounce(oz)  butter
1/2 Cup(c)  breadcrumbs, toasted
1/2 Teaspoon(t)  nutmeg
6 Slice(sli)  cooked ham
1 Cup(c)  cheddar cheese, grated
3 Cup(c)  white sauce
3   celery hearts


Clean and trim the celery hearts and cook them in a large pan of salted boiling water for about 15 minutes, or until they are tender but not falling apart.  Meanwhile prepare the white sauce and add the cheese to it.  Cut each celery heart in half and wrap each half in a slice of ham.  Sprinkle with nutmeg, lay them in a row in a shallow oval ovenproof dish and cover completely with the cheese sauce.  Sprinkle the breadcrumbs over the top and dot with butter.  Bake at 400 degrees F for 20 minutes and serve hot and bubbling.
