Recipe Description
Sometimes there's just no time to bake a cheesecake when you want one. These bars are as creamy and delicious as cheesecake, and can be thrown together in a few minutes. Unfortunately they can be murder to get out of the pan neatly. Here's a great tip: Freeze the baked bars in the pan, covered, just to firm them up a bit, and then slice them.

Ingredients

2 Tablespoon(T)  fresh lemon juice
2   large eggs, at room temperature
1/4 Cup(c)  whole milk
1 Cup(c)  sugar
2 Package(pk)  cream cheese, at room temperature
2/3 Cup(c)  light brown sugar
2 Cup(c)  all purpose flour
2/3 Cup(c)  unsalted butter, at room temperature
1 Teaspoon(t)  pure vanilla extract

Preparation

Preheat the oven to 350°F. Spray a 13 by 9 inch baking pan. To prepare the crust: Stir the butter, flour, and brown sugar together in a bowl. Reserve 1 1/4 cups of the mixture for the topping, and press the remainder evenly over the bottom of the prepared baking pan. Bake on the center oven rack until the crust is set but not yet brown, about 12 minutes. Meanwhile, prepare the filling. Beat the cream cheese, sugar, and milk with an electric mixer on medium speed, scraping the bowl several times, until light and fluffy, about 1 minute. Add the eggs, lemon juice, and vanilla, and beat, scraping the bowl several times, until blended, about 45 seconds. Scrape the filling onto the crust, and sprinkle the reserved crumb mixture on top. Bake until the filling is set and the topping is golden, about 25 minutes. (If it looks puffy and uneven, it will settle when cooled.) Let it cool completely in the pan set on a wire rack. Then cover and freeze, for 30 minutes before cutting into squares or bars.
